Food and Snack Thread

You have a recipe that you want to share .. Put it here ..

I'll start I have the best and easiest Buttered Toffee recipe...

Once you make it you'll NEVER buy store bought toffee popcorn again ...

What ya need :

Pop a bag of lightly salted popcorn or plain { remove the old maids in popped corn }
1 stick of unsalted butter
1 cup + 1/8 c of light brown sugar
1/4 cup plus 1/8 c of Dark corn syrup
1/8 teaspoon sea salt
1 teaspoon Vanilla
1/2 teaspoon Baking soda
1 cup of what ever kind of nuts ya want
1 heavy 2 qt pot
preheat oven to 250*
Butter a rimmed cookie sheet {set a side}
Large bowl

Melt butter in pot add sugar ,syrup, salt .Stir till melted and boils
on med heat ... Boil for 3 min ..
remove from heat and stir while adding vanilla and baking soda.
{ these ingredients will make this mixture foam up keep stirring ! }

Pour half of mixture over popcorn and nuts ..
Stir then add more of the toffee mixture..
Once all mixed place in to the rimmed cookie sheet spread it in pan .
And place in oven and bake for about 30 min - 1 hour

Cool for 20 min..

Break up in to smaller pieces.. And enjoy .

Foot note you can double this recipe ...

I go back to work on the 16th... I have a recipe there from heaven (came from a 5-star hotel's head chef). :wings

As promised, today I was back at work and accessed the cheesecake brownie recipe :wings

These things are easy to make, and evil. Like about 8 gazillion calories per slice. But sooo good, even the non-desert people devoured the entire tray.

So... the backstory is a pastry chef was in a business class (she wanted to eventually run her own place). She was from the top private kitchen for the suites of a 5 star hotel. She kept bringing in various crazy-tasty things for us all to eat (I was teaching baby law to this mob back in 2009). Of all the different things, she only shared this one recipe.

Think of a moist chocolate brownie biscuit base, about as thick as your little finger. Now on top add a cheesecake about as thick as your thumb. :DukeGirl

Recipe is below. Pic is terrible - one of the kids grabbed a cell-phone pic - but the recipe is real easy.

Be warned. One girl made it, and her brothers ate it, so she made it a 2nd time, her Dad ate that, she had to make it a 3rd time before she had a batch to bring in. Seriously.

I figured if you can survive celsius/centigrade then you can cope.

Don't forget there's cm you gotta change to inches too in that recipe :hornets

Black Bean Brownies

Ingredients
15 oz canned black beans, rinsed and drained
1/4 cup unsweetened cocoa powder
1 tsp espresso powder (I use "Maxwell house Rich instant coffee", it's in a small jar)
3/4 cup liquid egg substitute
3 tbsp whole wheat pastry flour (I use White Whole Wheat from Eagle Mills)
3/4 cup agave nectar
1 tbsp unsalted butter, melted
1 tsp vanilla extract
My tweaking  chop 1 cup of walnuts.. Put in a strainer and shake it so the small chaff drops out..
Lindt has a 85% cocoa bar I use 4 SQ. melt that and stir 1 or 2 tea of agave,

Directions
Preheat the oven to 350°F. Spray a 8 x 8 x 2-inch baking dish with cooking spray. Combine the beans, cocoa powder, espresso powder, egg substitute, and flour in the bowl of a food processor. Process until the mixture is smooth, about 2 minutes,or more  scraping down the bowl halfway through.
Add the agave, butter and vanilla. Process until all of the ingredients are combined, about 1 minute.or more..
At this point add the Walnuts and stir ..  Pour the batter into a prepared baking dish, and smooth the top with a spatula. Bake for 20 minutes, turning the dish halfway through the baking time. Turn down the temperature of the oven to 300°F and bake for another 5-8 minutes, until a toothpick inserted in the center comes out with a little bit of soft batter clinging to it. It should not come out clean, if it does: it’s overcooked.
Let the bars cool  a tad  at room temperature in the baking dish on a wire rack. After it's semi cooled I schmooze the melted 85% coca on the top and add the pecans.. Then put them in the fridge for at least 2 hours. When they’re coldish , cut them into 12 or more squares and return to fully cool and serve.
    Watch cutting as the top coat of chocolate might try to come off.. So kind of score it a tad then cut .. Refrigerate any leftovers. They keep for a week+ in the fridge under saran wrap..

My oldest son does NOT want ANY kind of nut in brownies or fudge..now that he has moved out, fuck him! :DukeGirl

Do y'all have a Denny's restaurant down there? If so, next time you go in, look at their menu, FULL of food pix! :DukeGirl
