One pot meals

Beans and rice!

(My tweaks for my Hearty recipe will be in brackets under the ingredient)

2 tbsp butter

1/2 cup celery
(I cut up 2 stalks)

1/4 cup onion

1/4 cup bell pepper-green, yellow or red..it don't matter what ever you like
(I dice up a whole bell pepper)

1 16oz can of red beans

1 lb smoked sausage
(I use the 2 1/2 pound package-cut to bite size-slice a piece and 1/4 it)

1 10oz can of Campbells condensed beef broth
1/4 cup of water
(I use about 1/2-3/4 cup)

1 tsp dried oregano
1/4 tsp white pepper
1/4 tsp black pepper
1/4 tsp red pepper
(I omit all of these due to a female in the house who hates spicy :wall )

1 1/2 cup of minute rice
(I use 2 1/2 cups)

In a LARGE deep skillet, or pot, melt butter over medium high heat: Saute onion, bell pepper and celery until soft, abt 5 min or so.

Add sausage, broth, beans, water and seasonings. Stir and bring to a boil.

Stir in rice, cover and let set 5 to 8 min.

Regular recipe serves 4, but my hearty recipe will serve at least 6

BBQ Chicken rice

1 pkg boneless chicken breasts
1 can of whole corn
1 bell pepper...red, green or yellow..it don't matter
1 cup of minute rice
1 cup of water
1/2 bottle of BBQ sauce..abt a cup or two

Cut chicken into bite size chunks/squares. Fry in skillet until they looked cooked, do not brown.
Add corn, bell pepper, BBQ sauce and water. Bring to boil, reduce heat and simmer 10 min.
add rice, cover remove from heat.

ready to eat in 5-7 minutes

Bean Stew!

I have a large heavy french oven - a slow cooker would work in a similar way.

2 tins of crushed tomato
4 tins of different fancy beans whatever is on sale
A few cloves of garlic (left whole)
A shake of whatever spices you're into

Cook very low for a couple of hours.

Serve with Greek Yoghurt :DukeGirl

I can make a week's meals like this, into the fridge and no cooking for 7 days :wings

A two-step process but delicious. My body-builder friends do this. It's really easy, and really really good. Plus it ticks every health/fitness/nutrition box.

Step 1 - Slow Cook Meat

They put 8kg in for 6+ hours. I go for 2kg for 4 hours, I am the opposite of a body builder and don't chase protein like they do.

So into the french oven or slow cooker with Chuck or Blade steak, the cheap stuff is best. Just a little water, some salt, and wait.

Once finished, drain thoroughly and into the fridge.

Step 2 - frypan

Heat a non-stick frypan
Take a chunk of that meat (e.g. the size of cigarette packet) and slice it very thinly
Put the meat into the pan
Throw in some mushrooms
Once everything is hot, add an egg or two (try not to break the yolks)
After a minute, add baby spinach
Once the spinach wilts, serve
Add fresh avocado
Garnish with chilli sauce and greek yoghurt
