I think I found the ultimate in lazy + yum cooking.
Step 1 = (preparation) my Beloved makes a chicken dish with mashed potato (3 days ago) and puts the leftovers in the fridge
Step 2 = I come home hungry
Step 3 = chicken + potato into frypan, tiny low heat, big knob of butter on top, go away for 40 minutes to shower/change/etc.
Step 4 = YUM the potato has cooked in the chicken juices + butter

We have several quick and cheap meals.
1- Campbells Hungry Man Sirloin bits soup over chinese dry noodles. This works with any of the beef versions.
2- Campbells Hungy Man Jambalaya soup. Add a couple handfuls of minute rice while you heat it up. Turns into a full rice dish.

Mustard + mayo from the cupboard.
Fresh rye (dark) bread, bought daily.
Butter from the fridge.
Some cold meats (whatever is on 50% sale at the supermarket).

hears my go to 5 minute munch . 4 slices of sliced bread toast in toaster . take 2 slice of toast lay on a plate cover in sliced salami /ham/spam/jam I find pumped up jam the best then diced up onion preferably spring peppers I prefer sweet tomatos I like cherry garlic lots of season with salt and pepper some fresh herbs like basil is good too maybe a few drops of tabasco coat with cheader /edam or what ever cheese you like place in microwave and give it a minuite spread some mayonnaise on the other 2 slices after the ping bang mayo slices on top turn over on the plate to dry microwaved slices . leave for a couple of minuites to cool and enjoy .

5 minutes is a tight timeline.
Eggs, scrambled, fried. Egg in a frame, butter both sides of a slice of bread, cut a hole in the center. Fry bread and center piece until browned. Flip, put a bit of butter in the whole. Break an egg into the hole, fry, flipping as needed until done.
Fried bologna
Avocado toast, add a fried or poached egg
Tuna or salmon salad made with canned fish
Yogurt with granola and dried fruit
Plethora of grilled sandwiches, if you have a Foreman grill they'll be like panini. Ham, tomato, basil, mozz cheese. Roast beef, cheddar, horseradish mayo. Peanut butter and banana. Chicken, avocado, jack cheese.
Steak cubes on the Foreman grill, add some frozen veggies or peppers and onions for an anti-shish kabob
Pita bread or English muffin pizza
Lots of stuff can be put in a tortilla for tacos. Scrambled eggs, sloppy Joe, steak cubes and veggies
Cube steak, aka minute steak. Jar of gravy and some instant mashed taters. Can do the same with deli sliced roast beef
Wedge salad with blue cheese dressing and bacon bits

All good ideas - and I am already the master of the <5 minute egg! (great minds think alike)
My current favourite involves my beloved. She is a health-freak gym-junkie type, and cooks up many kg (think 10+ lb) of meat (mince) with vegies and zero fat, she trims the meat...
... we put plastic containers of meat in the fridge for the week, also plastic containers of cooked black (wild) rice.
When I get home from my weird late shifts - I put one tub of the meat and one of the rice into the frypan on HOT... I think I am eating within 5-6 minutes
The plastic tubs are re-usable, they get a quick rinse, and the pan is non-stick and is about a 30 second clean-up.

If you have precooked beef and rice all you need is veg. Lots of frozen veg available but I always check to see that mine aren't from China.

My favorite quick and easy:
Steam rice. If you have a steamer you can go do something else while your rice cooks.
Throw some Chinese greens or broccolini in a very hot pan. Add some oyster sauce and some puff tofu. Kid loves this too.
Another favorite is polenta or grits with some stinky cheese, wilted greens and an egg on top.

Open can of beans (I like black), pour into a pot. pour in some salsa to cook with them. Soft cook some eggs. Warm a few tortillas. Crumble some cotija cheese in the beans. Yum.

OK my tip for the day..
soft boil eggs.. That is a 7 min egg .. white firm yoke soft...
Boil H20 first …
Take the fat end of the egg and pierce the fat end of the egg with a pin just threw the shell..
(I also do this with hard boil eggs) It makes peeling so much easier..
Mark the eggs with a pencil (only need ta do this with soft boil eggs) ,so that you know what egg ya put in the boiling water first..
Just as you set the first egg in the water set timer.. and put in the other eggs .See that why ya mark them..
I use X's and O's .If it's 4 eggs 1 x , 2x, 1 o then 2 o's
While hey are boiling I take a bowl and some butter salt, pepper and set that on a toaster while I'll toasting bread.
7 min ya pull the pot off the stove bring eggs to sink , tap the first egg on the surface to crack with some fresh running water and start peeling from the fat end.. The eggs fresh or store bought will peel so much easier ,cause of the small hole on that air sack end …

This counts, I think. Literally 2 minutes of prep, but then 45-ish minutes to cook. Enough time to have a shower, feed the cats, etc.
Lately I've been buying purple onions and baby red potatos. The larger onions match to the cooking time of the smaller taters.
Just plonk them on the tray [put aluminium foil first]... add a touch of olive oil and sprinkle some herbs.
45 minutes later, yum!
