Was planning to do the Prime Rib thing for Christmas, but I ended up spending the Christmas holidays, and the next two months in Floridoodle. The Prime Rib has been sitting in the freezer since early December. Thought about doing it for Easter, but there are too many things going on right now.
The next hot event on the calendar is April 15, MAYBE.

April 15th came and went and the silly Prime Rib is still in the freezer. Every time I suggest we get it out to start defrosting, I get shot down.
I may have to force the issue by pulling it out of the freezer on my own.

You can do that with any hunk of meat. For beef, get the center to 140 - 150 degrees and you're done. Not sure on how chewy it might turn out. Might work okay for a decent pot roast. But, I'd think it would be a waste of prime rib.

Yes, February 6. It is called Waitangi Day. Supposedly celebrates the memory of the signing of the treat of Waitangi in 1840. But it is often more divisive then not, heavily politicised.

Finally, finally, finally! Cooked the prime rib yesterday. Did the Chef John method. Came out perfect! Had mashed potatoes and green beans as sides.
I can't begin to comprehend why it took so long to get it done; it's been close to 10 months! Oh, well.

I've hated roast turkey since I was a rug rat , dry nasty and tasteless . And I've probly cooked over a hundred since I discovered Cajun fryed turkey , the injected maranade is what makes it specially since I always add habanero powder to the marinade . This year will be an air fryed turkey , all the Cajun goodies but no oil . I picked up a fryer big enough for a 18 lb turkey for 40 bucks last summer regular price 120 bucks so it's test time in a couple weeks .

Turkey has always needed something. That's why the gravy, cranberries, etc. have always been part of the deal. Habanero cranberry sauce might have some potential...

I cooked 2 (turkeys) over the weekend on a smoker at a rally. Neither one lasted more than 10 mins after I carved them. I say it everytime I cook one on the smoker, damn that was the best turkey I've ever had. About 20 of my friends at the ride thought the same thing.

Had Ham before but my choice would be Prime Rib...
When the folks were alive we'd alternate. I'm not real cool on ham, especially salt cured.
But Roast Beef and Yorkshire Pudding.... Mmmmmmm
